Known to the Aztecs as hu?uhtli, amaranth is thought to have comprised up to 80% of their energy consumption before the Spanish conquest. It was also used to prepare ritual drinks and foods, which prompted the Conquistadors to ban its cultivation for religious reasons. Nowadays, though, a new appreciation for the nutritional value of the crop has brought a resurgence in the cultivation of amaranth, as we will learn on this tour.

Afterwards, we will stop for lunch at the Hacienda Santa Martha, which offer an incredible all-you-can-eat buffet featuring dozens of tempting dishes. (Note: tour price does not include lunch, which will cost approximately 200 pesos for food and beverage.)
