Chris Tou is a resident expert on the history and production of chocolate, particularly in regard to its use in Mesoamerica.

Oaxaca and southern Mexico are awash in food and beverages most foreigners have never seen or heard of before. In this talk, we will discuss two plants, cacao y maguey, that have a foundational place in the daily but also ceremonial lives of Mesoamerican people: chocolate and pulque. We will dive into these worlds, both ancient and modern, to discuss what you might see on the streets of Oaxaca and help you approach the foods and drinks of this place.
