What exactly is Caldo de Piedra, or Stone Soup?
Caldo de piedra is a traditional freshwater seafood soup served in a hollowed-out gourd known as a jicara, featuring ingredients such as red snapper, shrimp, cilantro, chilies, tomatoes and epazote, an herb native to Mexico. It is cooked using white-hot river stones, which have been slowly heated over an open fire and added into the gourds. The soup is served bubbling and steaming – a delicious offering with more than 2,000 years of history. This unique pop-up event celebrates culture, cuisine and history .
